Michelin Chef - De Rozario
Jermain de rozario

We are launching our Indonesian Rum; Mates Arrack, a unique blend of Batavia Arrack from Indonesia and fine Caribbean rum. This special creation has been developed in collaboration with Michelin Chef Jermain de Rozario, whose Indonesian roots and culinary expertise have contributed to the depth and authenticity of the product.

Self-taught Jermain de Rozario continues to develop his streamlined vision, demonstrating a youthful playfulness that is increasingly balanced and bringing his own style to creative cuisine which focuses on Asian delicacies. His new address boasts an urban panache which suits him to the core, from the music to the plant-based decor and bamboo features. An exciting development! (Ref: Michelin Guide)

Rwa Bhineda

The Indonesian Hindus believe in integrating dualism, which is the idea that two opposite things depend on each other to exist. You can’t have a day without light, black without white, low without high, joy without sorrow, etc. This is the core tenet of Rwa Bhineda.

Rwa Bhineda promotes an appreciation of opposites and differences. Indonesian Hindus are taught not to despair too much, because there will always be joy to balance it. Joy on the other hand should not be celebrated too excessively, for it will eventually be balanced by sadness.
